I know. Salad can get pretty boring. If you go to Le Bambou in Del Mar? He calls ingredients salad, but it’s not salad at all. There are vegetables for sure, but it’s not your standard. And that is flavor packed. So that’s what I am going to do today. We will explore ways to add, tools to create more fun and great choices for a flavor packed salad.

Salads don’t have to be boring! Think about what you really love. Is it toasted Pine Nuts? Or maybe some squares of cheese? By layering flavors and textures, you can create a dish that’s vibrant, satisfying, and packed with nutrients. And this gets more antioxidants in your system. This fresh and flavorful salad features crisp lettuce, breakfast radishes, cucumbers, prosciutto, red peppers, mushrooms, onions, and cheese.
You can top with Toasted Pine Nuts, done in a dry pan (but keep your eyes open because they burn quickly) and other veggies of your choice like avocado, asparagus and broccoli.
Plus, I’ll show you a few chef tricks—like how to harness the power of fond for extra flavor, crisp up prosciutto quickly and more. Let’s dive in!

Each ingredient in this salad is chosen not only for its taste but also for its health benefits:
- Lettuce – A low-calorie base that provides hydration, fiber, and vitamin K for bone health.
- Breakfast Radishes – High in antioxidants and vitamin C, great for digestion and skin health. What no one ever mentions is: Radishes help clear mucous. So if you are clogged with a cold or allergies, these are great to eat!
- Cucumbers – Hydrating and refreshing, with vitamins K and C and anti-inflammatory properties.
- Prosciutto – A savory, protein-rich ingredient with healthy fats (just use in moderation!).
- Red Peppers – Loaded with vitamin C, antioxidants, and fiber for immune support.

- After using the fond, pour in warm water while the pan is still hot and steam it for a minute.
- Scrub with a wooden spoon then follow up with a Brillo pad.

1. Quickly Crisping Up Prosciutto

Lay prosciutto slices on a screaming hot steel pan. You’ll know it’s ready when a drop of water can hop around and be swirled.
Pieces of Prosciutto are added protein and add the perfect crunch to your salad!
2. Squeezing Lemon Without the Pits
Roll the lemon on the counter before cutting to release the juices. Then, hold the lemon juice side up. Your pits stay at the top and your salad gets a lemon spritz. Acid always bumps up a flavor profile. In salads you can also use balsamic vinegar.
In this case, the dressing turns out to be a lemon and cheese combo. If we used avocado, there would be no need for dressing at all, except I would eliminate the cheese.
The Secret Flavor Booster: Fond
Fond is the caramelized bits left at the bottom of a steel pan after cooking. In this case, instead of adding salt, I use the fond from
the prosciutto to caramelize onions. These little browned pieces are packed with flavor and can take your salad to the next level. Here’s how to use it:
- Deglaze the Pan – After sautéing prosciutto, add a splash of lemon juice or water and scrape up the flavorful bits.
- Mix it In – Use this as a warm dressing or drizzle it over your salad for an extra depth of flavor.
3. Keeping Cheese Fresh
Store cheese in cheese bags instead of plastic wrap. Cheese needs to breathe, and these special bags prevent excess moisture buildup, keeping your cheese fresh longer. I buy mine at Jimbo’s.

4. Fun Chopping Trick: Use a Crinkle Cutter
Want a playful texture in your salad? Use a crinkle cutter to slice your cheese, cucumbers, and radishes. This not only makes them look appealing but also helps the dressing cling better to each bite.
Final Assembly
- Toss lettuce, radishes, cucumbers, mushrooms and red peppers in a bowl.
- Add crisped prosciutto and crinkle-cut veggies.
- Add the warm fond-infused onions.
- Give it a final squeeze of lemon and enjoy!
