Valentine Pancakes with A.R. Valentien, La Jolla

Just in case you are a Foodie who likes to cook, A.R. Valentien, La Jolla gave us this beautiful recipe card for the most wonderful Lemon Ricotta Pancakes, you may want to whip up this weekend!

Lemon Ricotta Pancakes

Often times, restaurants will not give their recipes out. At least not measured out and listed as a ‘how to’ like this.

So we are more than happy to have this detailed information.

As you can clearly see, the order in which you create these pancakes are much different than “take a half cup of pancake powder, a half cup of water and mix”.

And after all the steps, count ’em, 5 steps, then you just go ahead and ‘cook like regular pancakes’. lol

Well, as you see, these are not regular pancakes! And when you make these, you will not be just a regular home cook!

If you want to make them a drop healthier, go ahead and substitute honey, date sugar or maple syrup for the pain old white sugar that your body can’t process! Now that’s love!

The flip side of this card has their Raspberry Syrup. They plate the pancakes with raspberries, then present syrup on the side.

I’m thinking that Date Sugar can easily substitute for the white sugar and come to think of it …. this is a great idea for any dessert! Think about creating a peach syrup, an apple syrup or any fruit you can puree. And apples are in season right now. (Yum. Yum. Yum. So sweet!)

Then find a recipe you like, with that fruit in it and you’re the chef! You have created a new recipe.

Yes! Of course you get the Raspberry Syrup Recipe as a ‘cheat sheet’!

Mine would be apples, with walnuts, toasted pine nuts and pistachios. I find myself addicted to nuts these days!

And of course, you know the spices that go with apples, right?

Cinnamon, a sprinkle or two of freshly ground nutmeg and a couple of pinches of ginger. Always use more cinnamon than ginger. And if you have fresh ginger don’t forget that it’s way stronger fresh than powdered.
