My daughter asked me to take her to Fresco Cucina in Carlsbad for her birthday because she eats clean and wants a restaurant that does not use seed oils.
Normally, I come with a big group of San Diego Foodies and Carlsbad Foodies but this time around it was just me and my daughter and her husband. We decide to do lunch.
I read some of the negative Fresco Cucina reviews on Yelp, and my impression is they call themselves a Mexican Restaurant but it’s actually South American cooking Mexican Style Food. That’s just what I think. Have you ever seen a Cesar Salad in a Mexican Restaurant? Probably not. Go in and judge for yourself.
And there are a few items on the menu that are totally crave-able. But we will get to that in a minute.
There was only one one person named Daniel working as a waiter the day we went. And I can tell you he did the very best he could to service everyone. The hostess (who may very well be the owner) was kicking in every chance she could. She made a great recommendation and is very passionate about the food they serve.
When I do reviews, it’s not to report everything that goes wrong but rather to highlight what you should order when you go. I have three recommendations:
First, order the Yucca Fries. Everyone at the table was totally ‘wow’d’ by them.
Second, order the Plantains. The tiny edges were caramelized adding a wonderful layer to the flavor

profile. So good.
And last, order the Bread Pudding for Dessert. Just the right amount of sweetness. We did not try much other than their tacos. Reach out to other reviews for their main dishes.
I say: Give this restaurant a shot and make sure you order these 3 recommendations!
With garlic, gusto and gratitude,
Chef Marian🥂
