Carrot Hot Dogs ~ A very interesting 4th of July!

Carrot Hot Dogs

The Medical Medium popped up in my inbox today, with a meat free recipe and as I start steering myself back towards a vegan lifestyle, I thought this might be fun to try.

So you may be eating Grass Fed Hot Dogs, which you can find at Sprouts, or going totally crazy and reinventing America with Carrot Hot Dogs!

It’s actually interesting, although I don’t think I would do a white bread bun.

But consider this: you’ve got the salt from the amino acid’s, the sweet from maple syrup, the tangy from mustard, the smoky from smoked paprika and jalapeño peppers.

I’m thinking you top anything with Ketchup and it’s probably OK. and you do know that True Made from Sprouts is the brand that has no sugar in it right?

Looking at the long jalapeño pepper. I’m also thinking that stuffing a cooked carrot with cinnamon and maple syrup, maybe making it a puree, might be fun. I do like the idea of a “pool” of mustard, it being a holiday and all!

Since I’m not having grass fed beef, then this looks like a fun alternative.

Carrot Hot Dogs

Ingredients:

For the carrots:

Topping options:

  • Ketchup
  • Diced red onion
  • Diced tomato
  • Sliced jalapeno
  • Chopped chives or cilantro

Directions:

Place the carrots to a small baking dish. Set aside.

In a small bowl, whisk together the coconut aminos, maple syrup, garlic powder, onion powder, smoked paprika, sea salt and water/vegetable broth. Pour over the carrots and cover the pan. Let sit for at least 30 minutes.

Preheat oven to 420F. Place the covered baking dish in the oven and roast for 30 minutes. Remove the cover and roast for another 20 minutes, until the carrots are just tender.

Place carrots in hot dog buns and add toppings. Serve immediately.

Serves: 6-8
