Olive Oil and new findings

All my years of being a news broadcaster have finally paid off. Every time I blog, I dig deep into what the current studies are saying and what many different and credible sources are revealing. That’s why I can bring you Olive Oil and new findings today. I’m always searching for new truth.

My AARP Bulletin tells us there’s a new study out that shows oils heated to 437, to see how toxic each gets, they found that “olive oil puts off the fewest toxic compounds (By the way … Sunflower and soybeans oils were the biggest offenders”). Canola and Peanut oil didn’t show up well either. I always knew about Peanut Oil, but after they started BPA free bottles, I thought Canola was ok. Hey! When you know better, you do better.

For many years now I’ve been using olive oil combed thru for a day of hair conditioner, using it to soften skin as well. Lately have switched to grapeseed oil for my face moisturizer. So good. So easy. So natural.

Ok. Let’s get back to food and side dishes. During this pandemic I find myself serving the people I am quarantined with their protein of choice, while I try to add lots of interesting side dishes that become my ‘main entrée’.

Tomato is the star!

Did you know that olive oil helps release the antioxidant lycopene in tomatoes? Well yes! So I took a hand full of grape size tomatoes, added cold pressed extra virgin olive oil and pieces of fresh herbs (oregano, basil, or parsley depending what’s available). And that’s another good point. When you order in or curbside your groceries, those $1.99 cases of herbs are great to increase the fresh flavor of your meals. And what if you have frozen? Take advantage and mix frozen with fresh and those wonderful fresh spices as well.

Here’s another thing I do regularly: I take a big box of organic spinach (for 5 bucks at most stores) and I cook it down with olive oil and paper thin sliced garlic. Can you say yum?

Another regular in my household is asparagus. Stove top.

Asparagus and Spinach Done Right!

Trim your asparagus, put in into a pan. Sprinkle bread crumbs down the middle. Spray with olive oil. Take 2 cloves of garlic and run them through a garlic press. Add that to the breadcrumbs and you’ve got a terrific ‘side’.  I’ve got so many new recipes.
