Fair Recipes. Well, you know there are almost 300 blogs on here and I’ve worked on stage at The Fair 4 times this summer, 4 times last. So that’s at least 8 days worth of healthy recipes. And we’re not counting holiday food here! lol But of course, there’s more. Way more!
If you were at The Fair in Del Mar last Thursday, when the Fab Four played, and got to come see me at 2pm, you got to see the Veggie Sandwich and Dylan’s Vegan Burrito. Both were so good that people came up at the end and wiped us out of every last piece.
Today was no different. We did a Vegan Lasagna Cookoff and a White Bean Dip demo, and at the end? There was no lasagna and 2 small tastes of the dip left (of the samples made). Now, wait a minute! I didn’t even get to try the lasagna’s! I’m pissed! lol
SORRY CHEF!
Well…. there were some San Diego Foodies there that came out to watch who did get to try the food. All right. All right. I’m ok about not getting food. Not really but…. for the sake of this blog, I’ll go along with it. lol
The good news is they’re simple to make. So I came home tonight and made another. You’ll see pictures and recipes on tomorrows blog.
But today? We’ve got recipes from last Thursday and Mr. D.
Here’s his Vegan Burrito:
Feeds 6-8 people
1 cup quinoa
1 can Amy’s Refried Beans
1 package Soyrizo
Pack of Le Fe Tortillas (Jimbo’s, Sprouts, etc)
3 small potatoes white or red
1/2 onion
3/4 of a head of Garlic, chopped
2 stalks Green Onion
Box of Cherry Tomatoes
1 large plantain (brown)
1 pak Mushrooms
1 Red Bell Pepper
1-3 Jalapeño
2-3 Avocados
Coconut oil
Cilantro
Himalayan Sea Salt
Lemon Pepper
Tortilla rolling instruction: Roll it like a …… ummm, cigar or cigarette. If you want, leave one end open to begin the feast fest!
Cook separately Quinoa and Beans. Combine Quinoa, Beans and Soyrizo. Put aside.
Cook Potatoes, Plantain, Soyrizo in the same pot. (Flash cook the Plaintain quickly – 2 minutes each side).
Combine Quinoa, Plaintain, Soyrizo, Potatoes. Add in raw veggies. Stir. Put avocado down the whole tortilla sort of like how you put tomato sauce down on a pizza pie. Stuff center. Roll. Eat!
Cool Dylan. Very cool. And also delish.
Next? My Veggie Sandwich. Last year at the fair they named it Croque Marian (pronounce Ma-ree-ennne) and roll your R.

It is good. My favorite quick lunch to make when friends are coming over, along with sweet potato fries!
So take your biggest fry pan, squirt three lines of oil, shred some parmesan right into the pan and cover it with a piece of bread. Press down, so that the cheese adheres to the bread. Give it a minute or two, cause you want to brown it as well. Then remove it from the pan, soft side up and store side by side until you’re done with your bread.
Next? Sliver red onions, slice tomatoes thin and cut avocados into long pieces. Layer that in between two pieces of bread? And you’ve got YUM!

And easy too! Try it in the next day or two. You will be amazed at how good that is.
