Today were going to talk about how to create Coleslaw with homemade mayonnaise. It’s a really good Side Dish for any meal and it’s one way of getting more vegetables into your life.

What’s wrong with mayonnaise that is store-bought?

All you have to do my friend is – read the label. There are all kinds of ingredients that you just don’t believe should be in mayonnaise.

So what is mayonnaise, generally speaking? It’s a egg yolks, mustard preferably a Dijon that has really good upbringing from France so that it’s got a little bit of a bite to it and then you drizzle good oil into it. I think the most important thing is the first 30 seconds that plus the master is going to help you emulsify or turn the ingredients into the thickened liquid we call mayonnaise. Wait till the end to season it with salt, pepper, caraway seeds and lemon. That comes straight from the horses mouth.

As I was putting together this recipe I stumbled upon Gordon Ramsay talking about mayonnaise. And he confirmed that for us because you don’t want the egg to turn or separate and lemon is something that can do that.

How easy is it to make Coleslaw?

Well in the video, our 1 Minute Bite we give you on YouTube once a week (at the bottom of the page here), it becomes very clear that you’re only taking two quarter pieces of a cabbage and a handful or two of carrots, with some caraway seeds, salt, pepper, an egg yolk, avocado oil and lemon, to make a huge vat of Coleslaw. And if you want to make as much mayonnaise as you will ever use in a week, all you need is one yolk, a teaspoon of the mustard and an emersion blender …. Salt Pepper, Caraway Seeds and Lemon … that’s it!

matter whether it’s Ralph’s or Whole Foods ….  you’ve got to pay attention and do the small things that move the needle. You may not be able to go vegan or even want to go vegan but there is some clear baby steps lifestyle changes you can make right now and this is absolutely one of them.

The big boys now use and the latest and the greatest (by the way Palm Oil has just been added to so many foods for no reason) but for years they’ve been using Safflower Oil and Sunflower Oil and Canola Oil – THE BIG THREE in everyone’s book – that are so highly processed to the point where your body cannot break them down. And that just gums up the works.

I’ve had people say “I don’t eat processed food”. Well yes. Yes you do if you’re eating foods off the shelf that have Safflower or Sunflower oil or even Canola Oil as an ingredient.

So let’s just take a moment and ask ourselves: Can I make my own mayonnaise? And can I create Coleslaw as a side dish? Think about it. You can create so many meals with a side of coleslaw and a sour pickle, a good protein and perhaps a carb, that are so satisfying.
