Sunday Morning Breakfast. Even when it’s interesting…. like you go to a restaurant for a brunch, it’s still pretty much same ole’, same ole.
Whether you’re vegan, trying to keep yourself in good health or just wanting a change, here it is!
I don’t know why we only think of guacamole when we think of an avocado spread but……. here’s another idea from my friend Lori. Soak almond and sunflowers seeds overnight (of course this time I was too lazy and didn’t)! lol
Dry and chop them and add them to half an avocado mashed and spread it on a rye crisp cracker.
Now, of course I never follow directions so instead I took the avo, put it in the food processor, added the nuts and blended my spread that way. Not too far off the beaten path.
I spread it on a couple of rye crisp crackers, topped it with salt and pepper and I must say, it was a very satisfying breakfast.
Of course, the nuts are your protein.
I finished breakfast with a ripe juicy peach. I’ve been hearing so much lately about the benefits of peaches. I think even Dr. Oz had a show talking about it. Did you know that both peaches and nectarines have potassium? You know, when you wake up in the middle of the night with a leg cramp, it’s both water and potassium your body is missing? I used to get leg cramps. If I only knew to drink more water, to eat more bananas…. well, I could have avoided myself a lot of pain!
Food is your best medicine. You know that! But it’s more important to enjoy your meals, once you know the value! No shoveling food in, and I give you permission to not clean your plate! lol
Happy Eating,
Chef Marian
