Eggs…… a perfect protein!

Eggs act lee. If you’re not vegan and looking for a perfect protein Eggs seem to fit the bill with 6 grams of protein. 9 essential amino acids. No carbs. No sugar. No issues with gluten.

It’s got choline which promotes normal cell activity, liver function and the transportation of nutrients throughout the body.

Me either! Choline? Never heard that word before, but in doing my research, this is what I’ve come up with. And Wiki says it helps prevent a fatty liver. (Read my other blogs to see how your body works on the fat in the liver first, then gets to work on your body fat)!

So this morning, it was time to hard boil some eggs. I’m doing a gig this evening and I need to take a protein I can quickly eat with some rye crisp and an apple. This makes it easy to stay on program (metabolic balance). 14 days of creating new recipes that make what you have to eat something you want to eat! lol

Back to the eggs – one of the things I don’t like is sometimes when I boil the eggs too long they get green tinge around the yolk inside.

When I was younger, I would take a pin and pierce the egg. But you do run the risk of bacteria contamination.

Well, lately, I’ve been following a new ‘game plan’ for hard boiled eggs. I cover them in cold water, bring it to the boil and then take it off the flame and let in sit for 10-12 minutes. I then run cold water over them and refridgerate.

You know not to microwave eggs in their shells, right?

YES CHEF!

Explosion city! And why would you, now that you have this ‘non cook’ method, where all you have to do is use a timer to set it and forget it?

But wait! There’s more? lol

Don’t let your eggs cook in boiling water, if you don’t want that green ring. High temps will do that as well. Best time to peel your egg? After it’s had time to cool. The egg becomes smaller cooled and that gives you some room between the egg and the shell. They say you should wait a week or so to boil eggs that have come home from the store. That’s according to The Incredible Egg and I’m taking them at their word that they are the experts! They also want you to know that “eggs can be refrigerated up to one week”.

I know. You were wondering how long you can keep ’em in the fridge hard boiled. You see how I know you? lol
